520 _ _ |a Complex fluids have manyfold applications in everyday life and industrial processes. For instance, plant-based emulsions that are stabilized by proteins and lipids are highly suitable for milk-drinks that are environmentally sustainable. Here, we study the quality and the mechanisms of proteins and lipids with respect to stabilization using small angle neutron scattering and neutron spin echo spectroscopy [1]. Complementary methods like drop tensiometry complete the picture obtained from neutrons. Further studies on various plant proteins complete the view in the direction of applications. The long-term goal of all our studies is to find new and better recipes for plant-based, sustainable yoghurts and cheeses with much better taste and performance.Apart from emulsions, binary liquids display critical composition fluctuations close to the phase boundary. When adding antagonistic salt or an amphiphile, the fluctuations are confined to 2 dimensions between the wave fronts of the charge density waves. This can be used to study new features of the dynamics [2] and the critical correlation-function exponent eta. The new transport mechanism may be interesting for energy applications of electrolytic fluids. Embedding the binary fluid in an aerogel, changes the criticality in the direction of the random field Ising model.
