abstract = {Vietnam belongs to the fifth largest rice producer
worldwide with a production volume of 26.63 million tons in
2023/2024 [1]. This enormous increase in yield came along
with the “Green Revolution” in the 1960s and is related
to the introduction of new varieties of rice, particularly
dwarf varieties, combined with the use of synthetic
fertilizers and pesticides [2]. However, this led to
undesirable developments, such as the overuse of pesticides
with known consequences. Organic farming opposes
conventional farming practices by strict prohibition of the
use of synthetic pesticides and fertilizers, relying instead
on alternative methods like optimized crop rotation, organic
fertilization, and biological weed and pest control [3].Rice
quality cannot be summarised in one parameter because
consumers have different preferences than industries or food
technologists. Quality traits encompass physical appearance,
cooking and sensory properties and, more recently,
nutritional values [4]. The measurable rice quality
characteristics include the amylose content of rice starch,
which is high for grainy rice and low for sticky rice [5].
Furthermore, antioxidants like phenolics and flavonoids
continue to play an important role in food because they
protect human cells from damage caused by free radicals [6].
Finally, -aminobutyric acid (GABA) is an important
neurotransmitter, which also has health-promoting properties
[7]. The objective of this study was to compare the contents
of amylose, antioxidants, and GABA of 7 different rice
varieties obtained from experimental fields in the province
Vinh Long/Vietnam cultivated under organic and conventional
cropping systems.},
